Position Purpose :

To provide an integrated and professional support to Transnet Freight Rail internal and external clients in order to maximise
companies long term growth, in order to achieve mission and the vision of the company.
To prepare and season meals daily Soups, vegetables, meats, desserts, breads and all other food commodities for the
restaurants, conference and events outlets.
To ensure that company policies and procedures are adhered to.

Position outputs :

Prepare and season, soups, vegetables, meats, desserts or other food stuffs in the restaurant.
Inspect food preparation and serving areas, to ensure observance of safe sanitary food handling practices.
Wash, peel cut and seed fruit and vegetables to prepare them for consumption
Carve and trim meat, such as beef, veal, ham pork, and lamb for hot or cold service or for sandwiches.
Weigh, measure and mix ingredientโ€™s according to recipes or personal
Turn or stair food to ensure even cooking
Season and cook food according to recipes or personal judgments and experience.
Regulate temperatures of Stoves, Grillers, Ovens, Broilers and roasters.
Bake, roast, broil and steam meats, fish, vegetables, and other foods.
Observe and taste food, to determine if they have been cooked sufficiently using methods such as tasting, smelling and
piercing through with kitchen utensils.
Ensure all foods are cooked to specifications
Bake breads, rolls and pastries
Ensure food served is portioned as per specification and is neatly garnished before serving.

Qualifications & Experience :

Grade 10
Professional cookery Certificate (from SAQA accredited institution) or 2 to 3 yearsโ€™ Cooking experience from three to five
star establishments.
Copy of a Valid Driverโ€™s Licence Code: (EB)
Competencies :

KNOWLEDGE:
Basic cooking methods
The knowledge of using all kitchen equipment and utensils as per standards including the storage and the handling.
Knowledge of customers service;
Hygiene and safety standards
Know your safety procedures
